Avocado, Gherkins & Tomato Salad with Jalapeno

Ingrediants
3 Ripe Avocados, cubed,
6 Nos Cherry Tomatoes (F&W Range)
1 Gherkin Sliced (F&W Range)
2 Jalapeños, sliced (F&W Range)
1 Bunch Lettuce
2 Tbsp chopped Cilantro
1⁄4 Cup extra virgin - oil
Juice of 1 lemon
1⁄4 tsp ground cumin
1⁄4 freshly ground black pepper
Salt to taste

Mix the Dressing
In a small bowl, whisk together oil, lime juice, and cumin. Season dressing with salt and pepper.
Toss the Salad

Chilli Fried Baby Corn With Vegetable Fried Rice

3 Cup Water
9 Baby Corn
1⁄2 Cup Plain Flour
1⁄4 Cup Corn Flour
1⁄2 tsp Red Chilli Powder
1⁄4 tsp Pepper
1⁄2 tsp Salt
Oil for frying
3 tsp Corn oil
2 Green Chilli
slit
1 inch Ginger
finely chopped
3 Clove garlic finely chopped
4 tbsp Spring onion
finely chopped
1⁄2 Onion
petals
1⁄2 Red paprika diced
2 tbsp Tomato sauce
1⁄4 tsp Pepper
crushed
1 tbsp Vinegar
1 tbsp Soy sauce
1⁄4 tsp Sugar
1⁄4 tsp Salt
1 tsp Corn flour
1⁄4 cup Water

Preparation Steps
At first cut each baby corn into three pieces season with red chili powder, crushed pepper and salt and dust the baby corn in plain flour and corn flour.
Cooking Method
Deep fry them on a very high heat to make it crispy on the top and keep on the side.

Then in a large frying pan heat 3 tsp corn oil and sauté 2 green chili, chopped ginger and chopped garlic on high flame.
How to Make
Sauté 2 tbsp spring onion slightly then add onion petals, 1⁄2 red paprika and sauté on high flame then add 2 tbsp tomato sauce, 1 tbsp vinegar, 1 tbsp soy sauce, 1⁄4 tsp pepper, 1⁄4 tsp sugar and 1⁄4 tsp salt. mix well and sauté for a minute.
Recipe Instructions
In a separate bowl, mix the corn flour with 1⁄4 cup of water to prepare corn flour water mixture, add to the pan mix until the gravy slightly thickens and turns translucent.
Cooking Directions
Additionally, add fried baby corn. mix gently making sure the sauce has coated well uniformly.
Method of Preparation
Finally, transfer chili baby corn to a serving bowl and garnish with chopped spring onions green and rest of ingredient on top.
